Regional Delicacies
Taste the centuries... local, handcrafted foodstuffs.
In the summer months the surrounding villages put on their annual food celebrations called "Sagre” which offer traditional Umbrian food and wine with locals gathered in the piazzas sharing in the excitement. One of our favorite celebrations is the Sagra dello Strangozzo al Tartufo. A typical Umbrian pasta made with truffles. There are many other specialties like wild boar stuffed with fennel, and quails followed by Pecorino, sheep’s milk cheese.
The famous "black diamonds" of Umbria are savory dark mushrooms known as “Tartufi”, Truffles that are coveted for their pungent flavor and aphrodisiac properties? Skillful farmers and woodsmen handle the hunting of these black beauties, using trail pigs with a nose for the rare fungus. Umbria is also home to unique cheeses, chocolates, breads and torts like Torciglione, a traditional Christmas cake and an unleavened bread known as “Ciaccia” that has survived in the hills of Umbria for over 2000 years.
The wines and grape varieties of the region are too many to mention, but the most notable are the wines from Montefalco, and earthy bold reds like Brunellos of Montalcino, Vino Nobile of Montepulciano and the award winning white wine, Orvieto Classico.
For more information on these and many more delicacies, you will receive a Workshop Handbook by email after you have registered for a workshop. The Handbook includes a complete listing of local cheeses, pastas, olive oils, wines and other local products to discover during your visit.
